Yuca Fritters Recipe
If you do not know what yucca is then we have a problem.
Yuca is a root vegetable, like potatoes, but its a little harder and has way more flavor.
This is the recipe to my famous Yuca fritters (arepitas de yuca).
It's the thing that I know how to make the best, so I decided to share the yummy-ness.
Ingridients:
1 lbs of Yuca
1 red onion
3 pinches of salt (be generous)
1 egg
1 pot with Oil to fry in (make sure you put a lot of oil so you fry this well)
Instructions:
Take the yuca, peel it and grate it. I do it by hand with the grater (the tiny hole side) and this way it comes out best. Grate the onion on there too and mix it all together.
put in the 3 pinches of salt and break the egg on there to mix everything together.
Once everything looks like its batter, take a spoon and make little mini pancakes with it. You can't really have this stuff sit, so once you make the little fritter drop it into the hot oil.
The hardest part of this whole thing is peeling and grating the yuca, so theres really no excuse not to make these...
